Ingredients
1 pound of raw "green" peanuts (not the color green, but fresh raw peanuts which are called green peanuts)
1/4 cup kosher salt (or 2 Tbsp table salt)
4 cups water
Optional seasoning

2 Tbsp Old Bay Seasoning, smoked paprika, shrimp boil mix, or even star anise
Method
1 Thoroughly rinse raw unshelled peanuts in water.

2 Put water, salt, seasoning, peanuts in a large stockpot. Bring to a boil. Cover. Boil for 2 to 3 hours or longer (some boil their peanuts all day), until peanuts reach desired level of softness.

3 Drain. Eat up within a couple of days. Boiled peanuts don't save as well as dry.
Again... what I like about them is they Do Not taste like peanuts. :) :) :)
Why let the truth stand in the way of a good fish story?

I tried boiled peanuts once, a few years ago. Maybe they were too freshly boiled, but they were wet. Should they have dried out first or do they always stay wet. I walked away with some really confused taste buds. My jar of crunchy Jif has served my tastebuds just fine since, but I might be willing to try them again if I knew what I should expect.

They tasted strangely, wet. I know of no other way to describe them, but I would be willing to give them another shot to find out.

I absolutely love boiled peanuts. Where I grew up they are VERY common and are found in nearly every store(gas, convenience, etc.). I get them every time I run across them at gas stations.

Yes anon, they are supposed to be wet.

Thank You Bubba B) I'm glad to be back at least for a little while. My co. is losing a few good people but their hiring freeze is spreading some of us pretty thin. I'm lovin this weather. ;)
