Seems like almost everyday here at the office, I hear someone say," Hey what you having for dinner tonight?" Everyones answers seem to evolve into some big discussion of food. So it gives me this idea to start this thread to see what people are eating! This could get interesting.

We mostly eat out, when we even work it out to be together at mealtime. I had this brilliant idea to cook the other day, and have something that would be readily available and quick to heat up, nutritious to boot. Carrot Soup. Ok, so it had a funky taste, remember, it was cold a couple of days and the warmth did my body good. The boy wouldn't eat it, motto at my house, eat what I cook, or go hungry. So, he went hungry with my promise it would be better next time if I leave the cloves out. Really, it could have been much worse, I don't care for cloves so I cut in half what the recipe called for, otherwise we both would have gone hungry. Just looking at the clock now. Hmm. Suppertime. Eat out, quick carrot soup. Who's buying tonight?

:blush: Pilgrams Pride chicken salad sandwich.....but it was better than turkey loaf that was forced on my kids and me many years ago, the one and only time that was attempted. :laugh:

I'm all about soups. Easy, plentiful and not too bad for you. I'll make soup out of whatever I have in the cupboard.Mmix some cans of corn, chicken broth, rotel and canned chicken and boil some noodles and you've got supper.

We live out of our crockpot, you can make ANYTHING in that baby. I also started saving the stock when I make chicken and pour it into small tupperware containers and freeze it. Anytime I have left over macaroni and beef, or cubed chicken or something similar, I'll drop it in with the frozen broth, add a bag of frozen stew veggie mix and spices and I get rave reviews every time.

What's for dinner tonight? I've got dinners planned up to Tuesday.

Tonight is chicken pot pie
Saturday is Chicken and dumplings
Sunday is taco's
Monday is chicken pot pie again
Tuesday is Mexican Casserole.

It's grilling season. We had porkchops on Saturday and hamburgers yesterday.
The best way I've found to grill potatoes is to wash them, punch 10-15 holes with a knife on each side, spray with Pam, salt lightly, then wrap in foil. Let them bake about 45 minutes on a low-to-medium heat before putting the meat on the grill.
Tonight is probably pennine (spelling?) sandwiches.
